In the spirit of hot summer days, I thought I’d share this recipe for a simple, raw food pesto pasta. It’s light, easy to make and perfect for warm summer evenings. This lovely dish only takes about 15 minutes to make. Chop a few veggies, blend a few hemp seeds, spiralize the zucchini and presto! Raw Zucchini Noodles with Hemp Seed Pesto! Delicious, nutritious with absolutely no cooking or ovens involved!
The spiralizer I use makes the noodles very, very long and skinny. I’d prefer a thicker noodle so if you can recommend a good spiral slicer please let me know! The one I have is okay, it’s really easy to use and will spiralize carrots and even sweet potatoes but the noodles are so thin. It does the job though and you can twirl them up just like spaghetti!
I use North Coast Naturals Raw Hemp Seeds and well, the rest is just veggies! Go organic where you can, especially the zucchinis! They’re always close to the top of most “Dirty Dozen” lists.
Of course you can use this pesto however you like, not just for this dish! I made regular pasta for my husband, he needs the extra energy. I, on the other hand, work at a desk 8 hours a day so whenever I can lighten up meals, I do! You could also use the hemp seed pesto as a spread or dip for raw veggies, it’s so flavourful and fresh you can’t really go wrong!
- 3 cups spinach, lightly packed
- 1 cup raw hemp seeds
- 1 cup fresh basil, packed
- ⅓ cup extra virgin olive oil
- ¼ cup fresh lemon juice
- 4 cloves garlic
- ½ tsp sea salt
- ½ tsp black pepper
- Place all the pesto ingredients into a high speed blender and mix well.
- Add a little water 1 tsp at a time if it's too thick.
