We had some friends over for dinner a while ago and I made these vegan chocolate ganache cookie dough squares. They’re rich, chocolately, melt-in-your-mouth tasty and no one will guess they’re vegan, gluten-free and no-bake! These little treats are very decadent and are made from completely whole-food ingredients. I love no-bake desserts, they’re so easy to make and I don’t even have to turn the oven on! I haven’t made any no-bake desserts since starting the blog but in the past I’ve made everything from cookies, to pie, to cheesecake and brownies. So stay tuned for some in future posts!
Chocolate Ganache Cookie Dough Squares
The original recipe can be found here on Damy Health. I’d recommend checking out their site for all sorts of awesome vegan recipes, weight loss tips and more. I made a few small changes, I omitted the chocolate chips in the crust as I didn’t have any vegan chocolate chips on hand. I also adjusted the ganache slightly to have a little less coconut oil and a little more cocoa. So check out the original recipe and adjust as needed. They’re going to be delicious either way!
Changes I Made:
- 3/4 Cup Coconut Oil instead of 1 cup
- 3/4 Cup Natural Cocoa Powder instead of 1/2 cup
- Omitted the Chocolate Chips
I wish I had one of these to eat tonight! I’m so craving something but I need groceries and I’m lazy, so drinking water it is. Mmmm, so satisfying! Haha!
Soreness from yesterdays workout is starting to settle in, mostly in my quads. The worst is when the dogs run over my legs with their little paws, it’s like tiny charlie-horses on sore legs! Luckily I got my speed work done on the treadmill before I really started to feel it, tomorrow should be interesting 🙂 I think it will be an upper-body only workout. I’m still planning hills for Friday and Power Yoga on Saturday. I found the 1/2 marathon training plan I’m going to follow. It’s a 17 week plan which is perfect because on Monday it will be 17 weeks to the June 1/2! So I’ll be starting that on Monday and hope to follow it though to a speedy 1/2 marathon on June 23rd.
Todays workout on the was:
Warm Up: 5 minute jog
Workout: 4 x 0.5 mile at 9.0 mph. Between repeats I just walked until my heart rate came down, roughly 1-2 minutes before repeating the next sprint.
Cool Down: 5 minute jog

What are you all doing for Valentines Day tomorrow? Us, not much. Tomorrow we’re going for dinner with my mom and aunt and uncle who will be in town visiting but we’ll have our own little mini-V-Day on Saturday.
