Oh my goodness! Sorry about that little blog hiatus there guys! Isn’t it funny how life gets a little busy and the days slip by like there’s no tomorrow!?
Instead of a What I Ate Wednesday post today, I decided to do something a little different. I’m rounding up a few WIAW posts from around the blogoshpere. AND even more exciting than delicious eats from healthy living bloggers, I’ve got 4-ingredient vegan protein fudge and WHAT WHAT…it’s gluten, dairy, and refined sugar free! BOOYAH!
I discovered all these goodies through Peas & Crayons What I Ate Wednesday link-up. If you’re looking for more inspiration, head on over there for 100’s of other posts from bloggers all around the world. YUM!
WIAW SHARE #2: Hummus Pizza from The Real Life RD
WIAW SHARE #4: Spinach Smoothie Bowl from Keeping Healthy Getting Stylish
WIAW SHARE #5: Carrot Cake Oatmeal from The Little Honey Bee
I wanted to include Amy’s post today because she talks about how quick and easy healthy eating can be. Reading WIAW posts is a fantastic place to get ideas and inspiration for healthy meals and snacks. Don’t let it all overwhelm you though, just keep it simple! A little food prep and meal planning goes a LONG way.
Alright onto this fudge I promised. Do you ever get a craving for chocolate that just can’t be ignored? Well this fudge is the answer! Keep a batch of this in the freezer and it’ll save the day when chocolate cravings strike!
This is insanely rich, so I recommend cutting the pieces very small for just a quick, little bite. I opted for adding in some North Coast Naturals Organic Hemp Protein just to balance them out and add in some extra nutrition. If you prefer you can omit this and add an extra 1/4 cup of cocoa.Print
